Peanut Butter Chocolate Chip Oatmeal Cookies

These cookies...

 They are everything that is perfect about chocolate and peanut butter.  The addition of oatmeal into the traditional peanut butter and chocolate duo makes these cookies delectably chewy!  And that chewiness is wonderfully paired with a crispy edge that makes you want to grab another one (or two!) of these little babies.  I promise I'm not just saying that.  They really are that good. 

 But don't take my word for it, make them for yourself :)





Peanut Butter Chocolate Chip Oatmeal Cookies

1/2 cup butter, softened to room temperature
1 1/4 cup brown sugar
1/2 cup sugar

1/2 cup peanut butter
1 egg + 1 yolk
2 teaspoons vanilla extract
1 1/4 cup all-purpose flour
1 cup old-fashioned whole oats
1/2 teaspoon baking soda
1 cup chocolate chips

1. Preheat oven to 325 degrees.
2. Combine room-temperature softened butter with the sugars and stir.  Then stir in the peanut butter.
3. Add the egg + yolk and vanilla extract, and stir.
4. Stir in the oats, baking soda, and flour.
5. Add the chocolate chips and stir.
6. Scoop onto baking sheets and bake for 10 minutes.
